[25 before 25] Pinterest Recipe No. 3 Avocado Round-Up

Aldi had a sale for 19 cent avocados last week. I've been waiting for them to thouroughly ripen before trying all the awesome avocado recipes I found on Pinterest. This was supposed to count as Recipe 3 for number 11 on my 25 before 25 project.

I had a great idea to plan a meal entirely around one ingredient: avocado.

First, the appetizer: Edamame-Avocado Dip from Better Homes and Gardens
via
Then a soup: Chilled Avocado Soup from Healthy Food for Living
via
And a salad (sort of a salad...): Avocado Egg Salad from The Pioneer Woman
via
For the Main Course, Creamy Avocado Pasta from Angela at Oh She Glows
via
with a side of Avocado Fries from Adrianna at A Cozy Kitchen
via
For dessert I planned to make Sweet Avocado Ice Pops from Fany at Food Republic
via
I even had an extra not-for-eating recipe planned: Avocado Deep hair conditioning mask from TLC
via
Unfortunately, right as I was about to embark on this intense cornucopia of avocado deliciousness, I discovered that all of my avocados were squishy and moldy. My thorough ripening had turned into thorough rottening. Major sad face. Next time there is an avocado sale, I will make sure I watch those puppies closely before I ruin my chances of having a full meal of avocado delight. Have you ever had a major ingredient fall through at the last minute? Did you end up eating cereal like I did? Can anything substitute for the perfection of a fresh ripe avocado?

  1. A fresh ripe mango comes to mind (mmm).

And I'm sorry to hear that the avocados were a no-go. That's frustrating.

  3. Awwww, Poor Kelly. I feel your pain, my child. I've got cilantro in the fridge that's been calling my name for the last 5 days. I think the sound I hear now is a death rattle, thus I am fearful of opening the fridge door......

    1. Thanks for your comment! I know it's something that takes a lot of time, that's why I started so early, but I still don't believe I'll finish it all :)
